When you think of February, we naturally think about Valentine's Day. While some think of loved ones on Valentine's Day, more often, we think about the relationship between two people.

St. Valentine's Day has had a long history of different kinds of love from martyred saints to modern day romance.

I like the story of Saint Valentine when he was in prison, and befriended the jailer's daughter who was blind. The night before his execution, he gave her a card that read "From your Valentine."

In the Bible we find 4 kinds of love:

Storge, meaning the love of a parent for a child.
Agape, meaning the selfless love of one person for another.

Agape love is what Jesus Christ demonstrated for us all when He died on the cross for our sins.

I can't believe we are starting another year here at Gluten Free Life!

I would like to say I have a new years resolution in place and a lot of plans for the bakery, but I don't.

I'm a bakery owner, mother, housewife, and teacher, who is disabled. Making resolutions, and lofty plans would be just adding more to my plate.

Besides, how many people make resolutions, then after a month or so those resolutions get tossed by the wayside? I'm skipping that step, you could say.

I'm all for keeping it simple, not over doing:
Number one, I will do my best to serve my God, and do my best to be the kind of person He would want me to be.
Number two, to be the best wife and mother I can.
Number three, to do my best at providing the kind of products our bakery customers appreciate, and having a good customer service.

Now some may say, isn't that a resolution? No, this is my life motto for now. My priorities list.

Owning a bakery is not my life, it is part of my life, a blessed part that helps me help my family. Plans will come as the year progresses.

My family is looking forward to a new year serving people at Gluten Free Life, living life, and helping others!

Tell us your story. How has having to eat gluten free affected your daily living?
What are your struggles?

I have lived with fibromyalgia for 12 yrs. now. Most of the time not knowing what was wrong with me. I thought I just had the flu a lot. Over time as I began to monitor myself and try different strategies, and had a couple of Doctors who believed what I was telling them! Yes, I had an answer, a starting point from where to work from.
I found the best solutions for my life and try to keep everything balanced.

I still experience pain on a daily basis, was I crazy to buy a bakey? Maybe, but I knew it was something we could do as a family, all work together to help provide for our family.

One of my daughters has heat and cold sensitivities, but she works hard, and doesn't mind the inconveniences it causes her, well not too much.

So I guess I know a little about life's struggles, and how we just have to rely on our father in Heaven to see us through each day. In our weakness we find His strength!

Learning All About the Benefits of Gluten Free Living

My wife suffers (and I do mean suffers), from fibromyalgia, and very few things that we have tried through the years have been of any benefit. Last year we purchased a home in the country along with a business located on the property. That business is "Gluten Free Life Bakery". My daughters have taken the business to heart and have done a wonderful job of running it. We also discovered as a side benefit, that my wife's symptoms from the fibromyalgia have improved. She has yet to go totally "gluten-free" in her diet, but she plans to do so in the near future. I hope that I will have many more good things to say about Gluten Free Living, when she does.

After trying a number of competitors products we discovered that many gluten-free products taste terrible. As one of our customers said to me "Most Gluten-Free food tastes like cardboard smells". Amy, the previous owner of our bakery, showed us that gluten free foods can taste great when they are made with good tasting grains and flours.
We were fortunate that the previous owner had developed many recepies that did not use rice-flour, a tastless flour with little nutritional value. My oldest daughter, Kendra researched the various grains and flours available to us and came up with some really great tasting Breads, Cookies and Muffins. One of the Twins has created a number of new cookies that people just rave about.

We were able to add Gluten-Free Oats to some of our recipies, however; they are quite expensive to obtain. We use only oats from dedicated fields and processing facilities and they are tested throughout every step to assure that they meet Elisa test standards. That is not to say that some Celiacs might not still have issues with the Oats, however; we have not had any negative feedback on our three varieties of Gluten-Free Oatmeal Cookies. We have Oatmeal Raisin, Oatmeal Chocolate Chip and Mocha Oatmeal (Fantastic with your morning cup of coffee).

The girls seem to have a natural gift for creating tasty gluten free treats. We are also open to trying new recipies, so if anyone has a favorite that they would like to post, please feel free to put in on the blog and we'll see what everyone thinks.
